# 176 & 177~ Apple Cream Cheese pies

I created a wonderful  new recipe. It's your basic apple pie but, I added in a cream cheese filling with a hint of lemon.  Now this recipe has been done before, but usually folks use an apple sauce mixture. I prefer using sliced apples.

Peel and slice  6 large apple, Granny Smith Apples are the best.. I like to use a variety of two or three apples.
  1. Preheat oven to 350º
  2.   Melt 1 stick of butter in a large skillet . Add sliced apples and lightly mix together.  In a small bowl combine sugar, cinnamon, and flour. Stir well and pour mixture over apples. Toss apples until thoroughly coated.
  3. Pour apples into pastry-lined pie pan. Pour cream cheese mixture over the apples. Place second pastry on top. Seal edges and cut steam vents in top crust.
  4. Bake in preheated oven for 45 to 55 minutes, until crust is golden brown.
Lemon cream cheese Filling
5 ounces cream cheese, room temperature.
1/2 cup  granulated white sugar
1/2 cup fresh lemon juice (approximately two large lemons)
2 large eggs
1 teaspoon vanilla bean paste
1 tablespoon grated lemon zest
TIPS: Always remove the zest first before halving and squeezing the lemon.
1 tablespoon grated lemon zest  In a food processor or electric mixer, place the cream cheese and process until smooth. Add sugar and process until incorporated. Add the eggs and vanilla  process until thoroughly combined. Add the lemon juice and zest and process until well blended and smooth. .
Pour over the apples and top with another pastry  and bake at 350  º for  50 minutes.

I made another one the following week. This time I created a deep dish version.

#175 Banana Cream Pie

Today I stopped counting every pie I bake.
They are not all part of the Pie Quest anymore.
It really has been unfair of me to include the pies I bake for Kate's Piehole Pie's
as the same as the pies I bake for him.
The realization is .... I've been  fudging the bet ..A LOT.
All those mini pies shouldn't have been counted.
Heck... a lot of those pies he hadn't even seen, let alone eat.

If it weren't for him I wouldn't have started  baking in the first place, and for that I am truly grateful .
I enjoy baking, and I want to keep working on this budding business .

Whats this all means to  the Pie Quest?
Well, for one thing, I am unfortunately  going to be writing this blog a lot longer than I had planned on.
I'd rather be married and running my pie shop.

I cannot make him eat a pie a day, or a pie a week.
Least we forget he is  diabetic.
So Today.. as I baked my orders for Monday, I included one more  pie..
for him.
I baked him a Banana Cream Pie.
 No,
it's not on  The American Diabetes Association's approved list but....  it's our  farewell to the overflow of butter and sugar that's been in our kitchen.

Tomorrow we dine on beans & veggies without the butter and we take a break on all that pastry.

Maybe its time I re- investigate those Stevia whole wheat pies again?
Yuck.

What's Love got to Do With It

Funny how challenges can change how we think .
When I first started baking I had several thoughts going through my mind.
The chief ones of course being... I'll get bored with this & I might not even stay with this guy.
Seriously.
I am a procrastinator by nature, and I get bored very quickly.
Was I being  honest with myself?
I mean, OK Ha Ha.. I baked a couple of pie to win the love of a guy, but 365?!?
Why would I commit myself to such an arduous task?
Yeah well.. I know why.
I fell in love .
I  announced it right away;  impulsive as always.
He's the love of my life. I might not have realized what I was saying at first but, yes  I truly felt it in my heart.
Hey.. maybe  I might finish a project?
Anyway....
He dared me, bet me, made a joke..whatever you call it..it was a good bet.
Even if I never marry him after this journey, at least I can say  I was willing to follow through.
I don't know why but all this seemed like a pretty good idea at the time.

So my guy bet against me. (knowing me like he does)
BTW  He has known me for years.
I imagined he thought..
"She'll  get bored &  give up, and  never even  get close to 365, maybe drop all  this silliness."
But I have made 174.

Through thick and thin we are who we are.
Pie is just pie.
Real commitment takes time and  hard work and sometimes a little meanness.
I think we make a great couple.
We can get kinda mean and  sarcastic, along with all that mushy lovey dovey crap.

We don't talk much about marriage these days,
We are living together.  Maybe that's good enough..
for now.

On the Waterfront

It is now the end of Summer and in my  little ol' town that can only mean  only one of two  things; either  the Apples are in season
or it's  The Waterfront Festival.
The Waterfront Festival is Our city's 3 day long music extravaganza. The hugest outdoor festival ( outside of Chicago) in the state of Illinois. Situated right in the heart of Rockford along the mighty Rock River. It covers the whole  downtown &  every Labor day weekend our town actually becomes  exciting.
Which usually is not the case.
When this festival first started I lived & worked in the downtown area. There wasn't a lot going on around here back then. I was 24 and bartending a very cool underground bar. A great hangout for all of us outcast punks, artist's and other  hip cats. Nobody messed with us. . Nobody was around.
This was not a place for the polo shirted Huey Lewis wanna Be's  who hung out  up on the East side.  Most of those cats were afraid to come downtown.
Until one fateful Summer's end when our city leaders decided to stage a festival. all was welcome.. One of the stages was right outside our front door, I didn't need to buy a ticket ... our hangout became part of the festival.. and I had front row seats. Cool.
We  all loved it, at first.
Massive amounts of partying and music and crazy people everywhere.
At least we were going to  show those other  Rockfordian's how we rock down here.
Three full days of music, food, & people watching  In our usually culturally  deprived  little town...this is awesome!
The first couple of years it was awesome.
But after awhile it started to suck. A lot of the same old State Fair rejects.. and last year's metal bands.  You know that whole "stuck in the  70's &  80's hair band" still reigns  supreme in our Midwest town.
This is the first year since the beginning that I am back  living in the downtown area. I am within walking distance to three stages.
Ahhhh... memories.
But instead of hanging out by the stages  I am going to set up a booth in my own  front yard and sell bottled water and mini pies. Why not? Make a buck. Besides I can hear all that music for free again, too bad it's not anything I really want to hear, but hey it's a party and all is welcome.
